TasteMark™ Technology
A halogen lamp, similar to those used in domestic lighting, is used to shine infra-red light on to the fruit as it travels along a conveyor.
Sweeter fruit absorbs more light at certain wavelengths than less-sweet fruit. This variation is too subtle to be seen by the human eye, so it's measured by a spectrometer linked to a computer.
Once the sweetness has been measured the fruit passes under a labeling system where the TasteMark™ label is applied only to fruit that makes the TasteMark™ grade.
The fruit is neither damaged nor affected by this process.
