How can we tell the difference?

A halogen lamp, similar to those used in domestic lighting, is used to shine infra-red light onto the fruit as it travels along on a conveyor.
Sweeter fruit absorbs more light at certain wavelengths than less sweet fruit. This variation is too subtle to be seen by the human eye, so it's measured by a spectrometer linked to a computer.
Once the sweetness has been measured the fruit passes under a labeling system where the TasteMark label is applied to only the fruit that make the TasteMark grade.
The fruit is not damaged or affected by this process.
